So it seems I’ve been on a baking frenzy lately. Since Kaylee has stopped drinking from her bottle, I’ve been able to clear all of the bottles (and the bottle cleaning and warming devices) off of my counter and my beautiful Pinkalicious KitchenAid Artisan Mixer has been brought back into the spotlight. I am ecstatic since I once baked all sorts of things (before Kaylee) and now I can finally get back to that. I decided to take Pinkalicious for a spin and make some cookies. I wanted chocolate chip cookies but I didn’t want plain old cookies so I added white chocolate chips to them and they were a hit! I took some to school and of course a couple of classmates were amazed at how soft and wonderful the cookies were. Luckily I wrote down the recipe as I went along. Here it is:
 
 
White Chocolate & Semi-Sweet Chocolate Chip Cookies

Ingredients
  • 1 1/4 cups all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 stick (1/2 cup) butter, room temperature
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, firmly packed
  • 1/2 tsp vanilla extract
  • 1 large egg
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
Instructions
  1. Preheat oven to 350° F
  2. In a medium sized bowl, whisk flour, baking soda, and together.
  3. In a separate bowl, beat butter, granulated sugar, brown sugar and vanilla extract until creamy. Add the egg and mix until well incorporated. (I did all of this in my mixer but it’s easy enough to do by hand or with a hand mixer.)
  4. Once the butter/sugar mixture is well mixed, gradually add the flour until the dough just comes together. (You don’t want to mix it too much after that or the cookies will come out chewy)
  5. Gently fold in both chocolate chips.
  6. Using a 2 tbsp cookie scoop, drop the cookies onto a parchment lined baking sheet or silicone baking pad. (I like to flatten them out just a little so that they are not round when they bake)
  7. Bake for 8-10 minutes or until golden brown.
  8. Cool on baking sheets for 2-3 minutes.
  9. Move the cookies to a wire rack to cool completely.
