With school in full swing, it’s so hard to find the time to cook a fabulous meal for your family. For me, I don’t have any kids in school but I am back in school and unfortunately for me, my hubby doesn’t cook. So, I have to find meals that are quick and easy that I can throw together in a pinch before I leave for class. Since my Kaylee loves pasta and the hubby is obsessed with Alfredo sauce, I thought that a pasta casserole recipe would be perfect! My Chicken & Broccoli Pasta Casserole is not only delicious, its quick and easy. It goes from oven to table in 25-30 minutes. To make this easy and delicious casserole recipe, I used Country Crock Original Spread instead of butter. I love Country Crock spread because it has 0g trans fat per serving, contains no partially hydrogenated oils, has 70% less fat and 30% fewer calories than butter per serving and it has no cholesterol (which is a plus in my family where high cholesterol runs rampant). Plus I like the taste of it and we all know that flavor is everything when it comes to feeding kids. If it doesn’t taste good, they won’t eat it. But what kid doesn’t love pasta? Here’s the recipe:

Ingredients
  • 16 oz Farfalle pasta, cooked & drained
  • 2 cups frozen broccoli, thawed
  • 4 cups cooked chicken, shredded
  • 4 tbsp Country Crock Original Spread, melted
  • 2 cups 2% milk
  • 1/4 cup heavy cream
  • 2 cups parmesan cheese
  • 1 cup panko breadcrumbs
  • Salt & Pepper to taste
Instructions
  1. Preheat oven to 400 degrees F
  2. In a large bowl, toss the pasta and broccoli together.
  3. In a small bowl, mix the milk, cream, 2 tbsp of the melted Country Crock spread, and 1 cup of the parmesan cheese.
  4. Add the milk mixture to the pasta/broccoli mixture.
  5. Season with salt and pepper and combine thoroughly.
  6. Add to a 2.5 quart (or larger) casserole dish.
  7. In another bowl, combine the panko breadcrumbs with the rest of the parmesan cheese and the rest of the melted Country Crock spread.
  8. Sprinkle breadcrumb mixture over the pasta in the casserole dish.
  9. Bake for 25-30 minutes just until the topping is golden brown.
You can substitute the farfalle for any other kind of pasta. It just happened to be the pasta that I had on hand at the time. You can also use leftover chicken or even cooked sausage would be great as well. I used a rotisserie chicken that I bought at the market and it was fabulous. I hope you enjoy this #QuickFixCasserole!
