Peanut Butter Banana Muffins - Peanut Butter for Breakfast

Breakfast is the most important meal of the day. Yet, many people do not eat breakfast because either they feel like they do not have time for it or it’s not easy enough to take on the go. In honor of September being Better Breakfast Month, the National Peanut Board is encouraging people to consider adding Peanut Butter for Breakfast. To celebrate Better Breakfast Month and peanut butter, I’ve made delicious Peanut Butter Banana Muffins for breakfast (recipe below.)

Making time for breakfast can be difficult. With a little bit of time and ingredients like peanut butter, which is high in fiber, protein and good fats, anyone can have a quick and nutritious breakfast. Peanut butter is a great addition to mornings because it is a natural, plant-based source of eight grams of protein and more than 30 essential nutrients and phytonutrients. Since 90 percent of American pantries contain one or more jars of peanut butter, it is automatically an easy go-to ingredient to help make breakfast quick and convenient. It is also a very budget-friendly ingredient for your morning meal. On average, peanut butter costs 16 cents per ounce, which is enough to make one sandwich.

  • It takes about 540 peanuts to make a 12-ounce jar of peanut butter.
  • The world’s largest peanut butter factory churns out 250,000 jars of the tasty treat every day.
  • Peanuts contribute more than $4 billion to the USA economy each year.
  • Americans spend almost $800 million a year on peanut butter.
  • The average American consumes more than six pounds of peanuts and peanut butter products each year.
  • The average child will eat 1,500 peanut butter and jelly sandwiches before he/she graduates high school.
  • Americans consume on average over 1.5 billion pounds of peanut butter and peanut products each year.
  • Peanut butter is consumed in 90 percent of USA households.
  • Americans eat enough peanut butter in a year to make more than 10 billion peanut butter and jelly sandwiches.

I love peanut butter on whole wheat toast or whole grain waffles as a quick breakfast but I also love incorporating it into different recipes. I made these delicious Peanut Butter Banana Muffins for my daughter since she is a muffin lover. I hope you enjoy the recipe and will consider adding peanut butter to your breakfast recipes!

Peanut Butter Banana Muffins - Peanut Butter for Breakfast

Peanut Butter Banana Muffins

A delicious and protein filled breakfast muffin.
Ingredients
  • 1 cup whole wheat flour
  • 1/4 cup quick cook oats (plus some extra for the top)
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg, beaten
  • 1/4 cup oil
  • 1/2 cup honey
  • 3/4 cup milk
  • 1/2 cup ripened banana, mashed
  • 1/4 cup smooth peanut butter
  • 1 tsp vanilla extract
Instructions
  1. Preheat oven to 400 degrees F
  2. In a large bowl, combine flour, oats, salt, baking soda, and baking powder. Set aside.
  3. In a separate bowl, mix together the beaten egg, mashed banana, vanilla, honey, peanut butter, milk, and oil.
  4. Add wet ingredients to dry ingredients and mix gently until just combined.
  5. Grease muffin pan. Fill 2/3 of the way.
  6. Sprinkle extra oats on top.
  7. Bake for 18-20 minutes or until golden brown.
 
Notes
For a sweeter muffin, add a sprinkle of sugar onto the top before baking.[br]Whole wheat flour can be substituted for all purpose flour.
