With summer in full swing (and barely any air conditioning in the new house) I dread turning on the oven to make dinner for my family. Also, being a busy mom with a preschooler and a newborn, I don’t really have time to come up with elaborate meals. I still want my family to eat well, but I just can’t find the time to spend an hour in the kitchen. Any easy, healthy meal solutions are what I gravitate toward. Since moving into our new home and having the baby, coming up with dinner solutions have been difficult. So, I headed to my local Walmart to see what quick, easy, healthy meal solutions I could find. I picked up a few Birds Eye Steamfresh® Protein Blends and a bag of Tyson® Grilled & Ready® Chicken Breast Fillets. I also picked up a couple of pantry items such as low sodium soy sauce and rice wine vinegar. I decided to go with an Asian-style meal for dinner. I marinated my chicken breast fillets and microwaved them along with my Asian Style Birds Eye Steamfresh® Protein Blends and came up with a quick dinner. Here’s how I did it:
In a small bowl, combine 1/4 cup of low sodium soy sauce, 1 tsp of rice wine vinegar, 1 clove of garlic finely minced, 1/2 tsp of grated ginger, 1/2 tsp of brown sugar, and 2 tbsp of water. Mix well.
Add your marinade to a zip-top bag. Add Tyson® Grilled & Ready® Chicken Breast Fillets and zip up the bag. Toss the fillets in the bag until they are coated in the marinade. Place in refrigerator for 15-20 minutes.
Place Birds Eye Steamfresh® Protein Blends, topside down, in the microwave and heat according to directions on the package.
Take marinated fillets out of the zip-top bag and place them on a microwave safe plate. Discard the remaining marinade. Heat the fillets according the package directions.
