A Healthier Banana Bread
Lately, the hubby and I have been trying to eat a little healthier. We stopped drinking soda (for the most part) which was a big part of our daily lives (sadly). We also have switched from white rice to brown rice and white bread to whole wheat and whole grains. It’s been a process but we want to set a better example for Kaylee. So, this past weekend, I wanted to make some banana bread. Instead of getting out the recipe that has a won of sugar and white flour, I decided to try my hand at making something a bit healthier. I came up with this whole wheat banana bread with greek yogurt and honey. Enjoy!

Ingredients
- 3 ripe bananas, mashed
- 2 eggs
- 1/4 cup coconut oil, melted
- 1/4 cup honey (you can also sub for agave nectar)
- 1/2 cup greek yogurt
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 2 cup whole wheat flour
- 3/4 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat oven to 350 degrees F
- In a large bowl, mix eggs, bananas, yogurt, honey, vanilla and coconut oil.
- In another bowl, sift flour, baking soda, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients mixing just until the flour has disappeared.
- Spoon the dough into a lightly greased loaf pan.
- Bake for 40-45 minutes or until a toothpick comes out clean when inserted in the center.
