Lately, the hubby and I have been trying to eat a little healthier. We stopped drinking soda (for the most part) which was a big part of our daily lives (sadly). We also have switched from white rice to brown rice and white bread to whole wheat and whole grains. It’s been a process but we want to set a better example for Kaylee. So, this past weekend, I wanted to make some banana bread. Instead of getting out the recipe that has a won of sugar and white flour, I decided to try my hand at making something a bit healthier. I came up with this whole wheat banana bread with greek yogurt and honey. Enjoy!
A Healthier Banana Bread

3 ripe bananas, mashed
1/4 cup coconut oil, melted
1/4 cup honey (you can also sub for agave nectar)
1/2 cup greek yogurt
1/2 tsp vanilla
1/2 tsp cinnamon
2 cup whole wheat flour
3/4 tsp baking soda
1/4 tsp salt
Preheat oven to 350 degrees F
In a large bowl, mix eggs, bananas, yogurt, honey, vanilla and coconut oil.
In another bowl, sift flour, baking soda, cinnamon, and salt.
Add the dry ingredients to the wet ingredients mixing just until the flour has disappeared.
Spoon the dough into a lightly greased loaf pan.
Bake for 40-45 minutes or until a toothpick comes out clean when inserted in the center.
